Gazpacho soup photo

A cold tomato based soup that is big on flavor but low on calories

Ingredients

  • 2 teaspoons - basil
  • 28 ounced - canned tomatoes
  • 1/2 cup - carrots peeled and diced
  • 2 1/2 whole - cucumbers peeled and diced
  • 2 whole - garlic cloves
  • 3/4 cup - green pepper diced
  • 1 teaspoon - kosher salt
  • 1/3 cup - lemon juice
  • 2 teaspoons - oregano
  • 1 teaspoon - paprika
  • 1/4 teaspoon - pepper
  • 3/4 cup - red pepper diced
  • 1/3 cup - red wine vinegar
  • 1/4 teaspoon - tabasco sauce
  • 3 cups - tomato juice

Directions

  • Place the tomatoes, tomato juice, cucumbers, carrots, green and red peppers, onion, and garlic in a food processor and process until smooth.
  • Add teh vinegar, lemon juice, paprika, oregno, basil, and pepper and process to combine.
  • Add the Tabasco sauce to taste and blend.
  • Chill for several hours.
