Island Pork Tenderloin photo

Spicy and sweet rub over a lean pork loin. Can substiute bonelss butterfly pork chops for the loin.

Ingredients

  • 1/4 teaspoon - black pepper
  • 1/4 cup - brown sugar
  • 1/2 teaspoon - chili powder
  • 1/2 teaspoon - cinnamon
  • 1/2 teaspoon - cumin ground
  • 1/2 teaspoon - garlic finely chopped
  • 1/2 teaspoon - kosher salt
  • 2 teaspoons - olive oil
  • 16 ounces - pork tenderloin sliced into chops
  • 1/2 tablespoon - tabasco sauce

Directions

    1. Preheat oven to 350 degrees, or start the grill
    2. Stir together the salt, pepper, cumin, chile powder, and cinnamon, then coat the port with the spice rub.
    3. Heat 1 tablespoon of the olive in in a skillet over medium high heat and brown pork, turning about 4 minutes (unless you are going to cook on the grill then skip this step)
    4. Stir together the brown sugar, garlic, and tabasco sauce and pat onto the top of the tender loin. Place the pork in a roasting pan, or on the grill and cook for 20 minutes.
