Mango Glazed Pork Chop

A grilled mango glazed pork chop packed with falvor.  Serve the mango salasa on top for an extra treat.

Ingredients

  • 1 tablespoon - black pepper corns whole
  • 1 whole - mango
  • 1 tablespoon - olive oil
  • 4 whole - pork chops thick
  • 1 cup - red wine vinegar
  • 1 cup - white sugar

Mango Salsa

  • 1 can - black beans
  • 1/3 cup - cilantro
  • 2 tablespoons - honey
  • 1/4 cup - lime juice
  • 2 whole - mangos
  • 2 tablespoons - olive oil
  • 2 whole - scallions diced
  • 1 teaspoon - serrano pepper diced seeds removed

Directions

  1.  Cut and puree the mango
  2. Place vinegar, sugar, and peppercorns in saucepan and reduce until thickened.
  3. Add mango puree to vinegar sauce and cook 1 minute
  4. Strain mixture into a bowl
  5. Brush pork chops with olive oil on both sides and season with salt and pepper
  6. Grill each pork chop for about 5 minutes on each side
  7. Remove and brush liberally with the glaze
  8. Serve with salsa on top

 

Mango Salsa

 

  • Peel and coarsely chop two mango.
  • Combine chopped mangos, black beans, scallions, Serrano pepper, lime juice, 2Tbs Olive Oil, honey, cilantro and salt and pepper into a bowl.
  • Toss mixture till well mixed
  • Place in fridge for 30 minutes.
