Mango Salsa photo

A fresh fruity salsa with a bit of a punch of heat from teh serrano pepper. Great serverd with pork.

Ingredients

  • 1 can - black beans
  • 1/3 cup - cilantro
  • 2 tablespoons - honey
  • 1/4 cup - lime juice
  • 2 whole - mangos
  • 2 tablespoons - olive oil
  • 2 whole - scallions diced
  • 1 teaspoon - serrano pepper diced seeds removed

Directions

 

  • Peel and coarsely chop two mango.
  • Combine chopped mangos, black beans, scallions, Serrano pepper, lime juice, 2Tbs Olive Oil, honey, cilantro and salt and pepper into a bowl.
  • Toss mixture till well mixed
  • Place in fridge for 30 minutes.
